Dextrins are partially hydrolyzed starches prepared by heating or dry roasting starch in the presence of an acid catalyst. • DEXTRIN 20.904 is a so-called „ellow" (or „anary") dextrin. When during dextrinization process the temperature is further increased and the starch is roasted for a longer period of time, yellow dextrins are produced. Compared with white dextrins they have a higher cold water solubility and they are more stable against retrogradation (or set-back).
